My favorite go-to lunch! It's vegan, gluten free and FULL of flavor! My favorite part is the avocado cream dressing. I find myself craving this all the time! This recipe makes one large or two small servings. I usually eat it all, it's just so good!
SALAD INGREDIENTS:
1/2 cup beyond beef
1tbsp water
1 tbsp taco seasoning
1/2 cup black beans
1/3 cup bell pepper diced (about one half)
1/2 cup grape tomatoes
2 cups lettuce
Handful of crushed tortilla chips
DRESSING INGREDIENTS:
1 avocado diced
1/4 cup cilantro
1/2 tsp salt
dash of pepper
1 tbsp lime juice
1/2 cup almond milk (add more for thinner dressing)
Prepare beyond beef on stove with 1 tbsp of water and taco seasoning. Add all ingredients to bowl and top with dressing and enjoy!
