Vegan Lentil Rotini

Guilt free pasta that tastes good!

My go to pasta that is guilt free and nutritious! I seriously make this once a week.

I'm Italian, so I LOVE pasta or any kind of carb for that matter. Being plant based, I have to be mindful of my protein intake. Lentils are a great source of protein and I am forever grateful for the mastermind turned them into PASTA FORM! Throw in some veggies for antioxidants and you've got your self a healthy pasta dish. See my recipe below! I'll be honest, I don't really measure the portions of seasoning I'm just like "this looks good," and roll with it.


INGREDIENTS:

-1 box lentil pasta (I usually use barilla)

-1 pack of grape tomatoes sliced

-1 pack of whole white mushrooms, sliced

-1 cup of spinach or kale

-2-4 garlic cloves, minced

-1 half jar of gluten free tomato sauce

-avocado oil

-plant based butter (dairy free)

-Vegan Parmesan

-salt, pepper, garlic powder, garlic salt, oregano and parsley for seasonings


DIRECTIONS:

-Boil pasta and set aside, drizzle avocado oil on the noodles

-In a large skillet, simmer minced garlic with oil

-Add a large spoonful of plant butter then add tomatoes (remember to cut them in half)

-Let tomatoes simmer for about 5 minutes then add mushrooms (cut in half)

-add seasonings

-pour mixture over noodles (you may need to add more butter/oil along the way but remember more oils means more calories)

-add spinach or kale and mix together until wilted

-top with vegan parm shreds and serve!
