There's nothing like fresh, warm baked cookies! If it's dairy free that's even better.
INGREDIENTS
½ cup vegan butter softened
½ cup white granulated sugar
¼ cup brown sugar
2 teaspoons vanilla extract
2 tablespoons non-dairy milk
1½ cup all-purpose flour
¾ teaspoon baking soda
Sprinkle of cinnamon to taste
¾ teaspoon maple syrup
¼ teaspoon salt
¾ vegan chocolate chips semi-sweet
*note-smaller dough balls the better consistency
DIRECTIONS
Preheat the oven to 350°F. Lightly butter a medium baking sheet (or spray non stick cooking spray)
Cream together the butter, granulated sugar, and brown sugar using a mixer (I do not have a mixer so I always just do this by hand & then knead/fold the dough in my hands)
Mix in the vanilla extract and non-dairy milk.
Mix in the flour, baking soda and salt. (Add maple syrup if dough is too dry or if you want the dough to be sweetner, this is preference so you can skip this step)
Fold in the chocolate chips.
Roll the cookie dough into balls and place on the baking sheet an inch or two apart (it's important to roll small balls, the bigger size they won't cook evenly)
Bake for 10-12 minutes. The softer the cookie, the less bake time.
Let cool on the baking sheet and enjoy :)
