Salmon Power Bowl



This salmon power bowl is so quick, easy + delicious! Leaves you feeling full and satisfied with all the nutrients!


I start by prepping the salmon first, then I toss it in the air fryer and prepare the other ingredients. I used the microwave for both the rice + edamame, as it made for a fast lunch with minimal clean up, but you can also use the stovetop of course to be more health conscious!




INGREDIENTS:

-One piece of salmon

-Jasmine or Basmati rice

-one small bag frozen edamame (only use half for this recipe)

-two mini cucumbers sliced thin (or one large english cucumber)

-One avocado

-3 small or 1 large carrot diced or shredded


SEASONINGS:

-one lemon

-soy sauce or coconut aminos

-dijon mustard

-McCormick's smokehouse maple seasoning

-Chili powder

-Paprika

-sea salt


HOW TO MAKE:


Roast the salmon:

-Remove skin (if any)


-Squeeze one half of a lemon onto salmon


-Pour small amount of coconut Aminos or Soy Sauce


(Aminos is a slightly sweeter, healthier version of soy sauce but either works, I actually used soy here because I was out of aminos)


-Brush salmon with dijon mustard- this helps the other seasonings stick and gives it a nice almost creamy type flavor


-Sprinkle "McCormick Smokehouse maple seasoning"- this is my secret ingredient to almost everything, literally. You should be able to find it in the seasoning aisle.

If you do not have access to this seasoning, it's basically just a combo of the following ingredients: maple, garlic, onion, + brown sugar. It has a hint of orange peel and smokehouse flavor.


-Top salmon with a little chili powder and paprika- I always add to this to my salmon. Always.


-Chop into bite size pieces


-Put a small spoonful of plant based butter in the air fryer, move around so bottom is coated


-Toss salmon bites into air fryer, set to air crisp mode at 390 degrees for 15 minutes. I pause it halfway through and use tongs to flip the salmon bites so they are evenly cooked.


Prep the other ingredients:

-Make rice first according to package. I used a microwavable basmati/jasmine mix, add to bowl as first layer


-Slice the cucumbers into thin pieces, add on top of rice


-Make frozen edamame according to package (add one half to bowl, save the rest for later)


-I added sea salt to the edamame after making, and dusted the rest of the bowl ingredients too!


-Chop carrot into bite size pieces, or use veggie peeler to make carrot noodles, add to bowl


-Add one sliced and peeled avocado to bowl


-Leave open space in the middle of the bowl, then add the star of the show- the salmon!


-Top with your favorite sauce or enjoy as is! For me, the salmon was plenty flavorful but I may add a homemade siracha mayo on top next time!
