One Pot Vegetable Soup

The comfort cure for sickness! Filled with nutrients to help your body heal.


Every time I get sick (which is quite often) soup is the only thing I crave. I prefer to make my own homemade soup filled with nutrients. When ordering out, there's a ton of oils and cross contamination in our food (we have no idea what those restaurant kitchens look like). I like to play it safe and make the perfect soup right here at home. Not to mention there's plenty leftover so I can survive on it for days if eating alone ha! I usually don't measure out portions but I tried my best to do so for the sake of this recipe! I would say this makes a good 6-8 servings. So gimme all the veggies and let's make my favorite comfort soup!


INGREDIENTS:

-2 cups of water

-Vegetable broth (half a box)

-Small yellow or red potatoes fresh (half a bag chopped, add more for additional carbs)

- Whole carrots fresh (about half a bag or six large carrots chopped)

-3 fresh garlic cloves minced

-4 celery stalks chopped (I LOVE celery in veggie soup, so I usually add a little more)

- 1 TSP of fresh ginger minced

-Handful of Asparagus chopped (about 6 large pieces)

-1 can of diced tomatoes with green chiles OR 1 can of plain diced tomatoes (I usually use plain tomatoes but I accidentally bought the green chiles last time and it was surprisingly good)

-1 can green beans

-1 can corn

-1 can green peas

-Seasonings: Salt, pepper, garlic powder, garlic salt, oregano (to taste)

-Fresh spinach or kale (optional for extra green intake)


DIRECTIONS:

You want to stir this constantly so the flavors blend together well.

If the soup becomes thick, add more water as needed.

-Bring 2 cups of water and vegetable broth to a boil

-Add potatoes and garlic

-Chop Carrots, add to boiling pot

-Let it boil for 5 minutes then add celery and ginger

-Let it boil for another 5- 10 minutes, then add Asparagus and tomatoes

-Let it boil for another 5 minutes then add seasonings and can goods

-Reduce heat to medium for another 5 minutes

-Simmer on low until fully cooked (I always taste test)

-Serve with saltine crackers and enjoy!
